I make it by blending roasted carrots with ginger and tangy rice vinegar. While you’re roasting your carrots, roast some chickpeastoo. They add a nice substantial bite to the mix of fresh, raw veggies in this salad. First time making a kale salad not out of a bag so I was not expecting much, but this is really enjoyable.
